The Short Version
Leeks regrow the same way green onions do.
Growth comes from the root base, not the stalk.
Water is enough to start the process.
What You Need
- Leeks with roots intact
- Shallow container
- Water
That’s it.
How to Regrow Leeks
- Cut the leek, leaving the root base intact
- Place the base in shallow water
- Keep the water level below the cut surface
- Put near light
- Change water every few days
New growth emerges from the center.
What to Expect
- New leaves in 3–7 days
- Slower growth than green onions
- Thicker, sturdier shoots
This is normal. Leeks take their time.
When to Stop
- If growth becomes thin
- If the base turns mushy
- If the smell changes
At that point, compost it or plant in soil.
Optional: Move to Soil
If you want longer-term growth:
- Plant the base in soil
- Water lightly
- Harvest as needed
Soil supports stronger regrowth.
